Burrito Bake

I found this recipe the other day and could not wait to try it. It was delicious!!! It was very easy to make and cheap. Altogether I spent $6 to make it, and there was plenty for us all.

Burrito Bake

8 frozen burritos
1 can rotel
1 can of cream of mushroom
8 oz of sour cream
1 cup shredded cheese

Preheat oven to 350°. Arrange frozen burritos in a casserole dish. In a separate bowl mix rotel, sour cream, and cream of mushroom. Pour mixture over burritos and top with cheese. Bake for 35-45 minutes (mine took 45) or until bubbly.

I served mine with tortilla chips but spanish rice would be my next choice. 😛

Hamburger Hash

I am not a big meat eater, but this was good. It was cheap to make too! I will definitely be adding this recipe to our family menu. I hope you like it.

Hamburger Hash

1 bag of frozen potatoes (or you can substitute for cut up potatoes which is what I did this time)
1 lb hamburger meat
1 onion chopped
2 cups of shredded cheese
salt, pepper and garlic to taste
vegetable oil

Add oil to pan & begin cooking the potatoes with the salt, pepper, and garlic salt. In a separate pan brown the meat and drain. When the potatoes are almost done add the onion. Saute until the onions start getting soft. Add the hamburger meat and cheese. Sprinkle a little more salt and pepper and it’s done!

Altogether I think this took me about 30 minutes.

BBQ Beef Casserole

I wasn’t really sure about this recipe, but I already had the ingredients so I figured I would try it. The total for this meal was $6.80 it fed the whole family of five. It was very good even my picky eater liked it. Plus, it was easy!

The bottom of this has a biscuit layer. You can substitute as you like. I use pizza dough in one of the pouches because it’s inexpensive. Can biscuits, bisquick, canned pizza dough, any of it will work fine.

BBQ Beef Casserole

1lb of ground beef
1 cup bbq sauce
1/4 cup of yellow mustard
1 cup if cheese
biscuit dough
cooking spray

Preheat oven 350°. Brown meat and drain. Mix mustard, bbq sauce, and meat. Set aside. Spray 8×8 casserole dish with cooking spray and put in layer of dough. Push the dough up the sides a little. Bake for 5-7 minutes just to get it slightly done. Take it out add meat mixture and top with cheese. Bake for another 10-15 minutes until the cheese starts to brown. Done!

John Wayne Casserole

I actually found this recipe while looking for another. My husband loooved it! Plus it only cost me around $6 to make. I have left off the jalapenos before, and I have also substituted the tomatoes and bell pepper with rotel. Instead of bisquick I have used pizza dough (it was a lot cheaper that way).

John Wayne Casserole

2 lbs ground beef cooked and drained
1 pack taco seasoning
4 oz sour cream
8 oz shredded cheese divided in half
1 yellow onion chopped
1 chopped tomato
1 green bell pepper chopped
jalapeno peppers (slices)
4 oz mayonnaise
2 cups bisquick

Preheat 325°. Cook beef, drain, and add taco seasoning according to package. In a separate bowl combine sour cream, 1/2 the cheese, 1/2 the onion and mayo; set aside. Mix bisquick (according to the directions) and add to the bottom of a greased 9×13 casserole dish. Saute remaining onion & bell pepper until soft. On top of bisquick add meat, tomatoes, bell peppers and onion, jalapenos, sour cream mixture, and top with remaining cheese. Bake 30-40 minutes until edges are lightly brown.

Easy Sweet & Sour Chicken

For less than $8, I made sweet and sour chicken with fried rice. The rice is instant and the chicken (popcorn chicken) was frozen, but it was good! The rice was what really took more time because I turned it into fried rice. It was still easy though.

Sweet and Sour Chicken with Fried Rice

1 bag of frozen chicken (I got popcorn chicken $4 a bag)
1 jar of sweet and sour sauce (I got La Choy brand my favorite!)
2 cups cooked rice
1 tbs olive oil
1/2 cup chopped onion
1/2 cup peas & carrots
1/2 tsp garlic seasoning
2 tbs butter
2 tbs soy sauce
salt & pepper

Saute onions, peas, and carrots in olive oil on medium/high heat until soft.
Add butter, cooked rice, soy sauce, salt and pepper and reduce heat to medium/low.
Saute about 5 minutes and it’s done!

The frozen chicken I cooked according to the package. When it was done I put it on the rice, and poured on the sweet and sour.

Easy Mexican Chicken

I seen this recipe on Pinterest and I am NOT a fan of beans or corn, but this was gooooood (& cheap). I served mine on rice and kind of made it like a dip with tortilla chips. Yummy! It cost under $10, and yes I had leftovers. Plenty! (for us anyway) I will break down the cost for you. I buy boneless chicken breasts or strips for $6 a bag for 2.5lbs at Sav A Lot. Can goods like corn and beans like I used in this are $0.49 a can or a little more. The tortilla chips are $1.49 a bag and rice is always cheap. Anytime something is on clearance I think can I use this? If so I stock up (depending on what it is) baked goods or veggies if I can’t use it immediately I don’t bother. My goal this month is to keep groceries around $300. We’ll see. Lol! Anyway here is the recipe.

Easy Mexican Chicken

1 lb of boneless chicken breast
1 can of corn
1 can of black beans
1 can of rotel (or cheap similar product)
1 8oz block of cream cheese
cooking spray

Spray crockpot. Drain all can goods. Put them in crockpot. Cut up cream cheese and put in crockpot too. Place chicken inside and cook on high 4-5 hours on high. Mix and done!

Chimichangas!!!

Another meal I have made for my family is Beef (or chicken) chimichangas!! It cost me $9.38 and yes I had leftovers. I do shop sale items and clearance items when I grocery shop. I also get some items like canned goods and spices at discount grocery stores. For example the large chain I used to get groceries at charges $1.69 for cream of chicken soup (1 can!). I can get them for just $0.69 at the discount store and they go on sale for $0.49 sometimes. Makes a big difference if you need 2 cans for a recipe! Anyway here is the recipe for chimichangas.

Beef (or chicken) Chimichangas

1lb of your choice of meat
8oz cream cheese
8oz shredded cheese (your choice)
Flour or wheat tortillas
Cooking spray
Taco season
1 cup of water

Cook meat in crockpot with taco season & 1 cup of water on high 3-4 hours or low for 6-8 hours. Drain and shred meat. Then mix with both cheeses. Spoon mixture into tortillas and wrap. Place on pan fold side down and spray top with spray. Cook 15 minutes on each
side at 350.
